I made another Rachael Ray pasta dish from her book, Guy Food : Rachael Ray’s Top 30 30-Minute Meals, called You Won’t Be Single for Long Vodka Cream Pasta. Of course, I am not single, but the wife and kids enjoyed it even better than the carbonara. Isabel ate all of hers and Aidan did not need to be coaxed as much as usual. Pam was only able to eat a small portion due to being sick. I had a plateful!
Although the dish contains a cup of vodka, the alcohol cooks off. Shallots and fresh basil are the only ingredients you might have trouble finding. Bi-Lo had shallots, but neither there nor Food Lion had fresh basil in stock. I added about two to three teaspoons of dried basil to the sauce during simmering rather than toss the final dish with fresh leaves.
Now I am going to have a difficult time going to restaurants like Pastaria or Tony’s. I am dead serious when I say that this recipe will make you want to stay home and cook!

Sounds good to me. I need to do more cooking! Problem with this is Erin and I have very different tastes in food. I would love the cream sauce… She would rather a fresh tomato sauce.
You could probably omit the cream and back off on the chicken stock (maybe altogether?), as the cream serves as a thickener. I’d make sure I used fresh basil then and mabye throw in some wild mushrooms.
